New England “No’Clam” Chowder

Nothing embodies New England more than a comforting bowl of clam chowder on a dreary, gray day, bridging the gap between seasons. It's not quite time for hearty stews but not yet barbecue weather either.


Introducing the creamy, subtly briny, rich yet unpretentious chowder. Neither quite a stew nor a soup, this vegan version is a definite winner in the "I’m craving Clam Chowder but not the clams" category. If you adore clam chowder and don't try this recipe, you'll be missing out on one of the most flavorful chowders ever! This seafood-free version captures all the delicious ocean-like essence without any clams. Lactose intolerant? Vegan? Allergic to shellfish? This one's perfect for you! 


This quick and easy recipe is just as rich and delicious as the original and will leave you full and happy as a clam.

INGREDIENTS

METHOD

2 C. Oyster Mushrooms (190g)

  • SAUTE mushrooms (10 mins.) add kelp and Old Bay set aside ***(all veg medium diced; mushrooms quartered

¼ C. Green Onion (20g)

  • 2. Using the same pan ADD a scant amount of oil and follow with onions, carrots and celery after (5 mins) add potatoes. Stir (5-7 mins) 

1 ½ C. Potatoes (195g)

  •  DEGLAZE pan with ¼ C. White Wine or Stock

⅓ C. Carrot (105g)

  • COVER and simmer (5-7 mins)

⅓ C. Celery (90g)

  • ADD Butter to the pan (melt)

⅓ C. Corn (45g)

  • ADD flour stir to coat and cook flour (5 mins)

⅓ C. Yellow Onion (105g)

  • STIR in milk and ACV; simmer    

5 Cloves Garlic (25g)

  • ADD Old Bay and Road Dust, corn, parsley and green onion and simmer for another 5 minutes

½ Tsp. Kelp Powder (2g)

  • SERVE with oyster crackers, and a dash of Tabasco 

3 Sprigs Parsley (stems and leaves)

  • ENJOY

For the Base


4 C. Full Fat Coconut Milk (1¼ pint)

TIP: If you don’t have oyster mushrooms, cremini/buttons will do!

2 Tbs. Plant-based Butter (30g)


2 Tbs. Flour (20g)


¼ C. White Wine or Stock (57g)


1 Tsp. Apple Cider Vinegar or Lemon Juice


1 Tsp. Old Bay Seasoning


1 Tsp. Road Dust or All Purpose Seasoning
