This tasty "SeeFood" Paella was born out of necessity. After a long day of travel we were both tired and hungry and in need of a warm, comforting meal that could be whipped up in under an hour. We had a mishmash of leftover ingredients from previous meals during the week; artichoke hearts from a pizza, some remaining peas in the freezer - you name it, it went in! From pantry remnants rose this delicious dish, that was both simple to toss together and a great way to avoid food waste. Every meal I create follows this approach. Packing for an extended road-trip is always a gamble, leading to an overpacked kitchen on wheels. The challenge? Embrace the chaos, get inventive, and craft your own flavorful masterpiece. ½ C. Frozen Sweet Peas (60 g.) |

½ C. Artichoke Hearts (80 g. quartered) |

1 Medium Bell Pepper (95 g.) |

¼ C. Mirepoix (40 g. ) (equal parts celery carrots, onions; finely diced) |

2 Tbs. Paella seasoning blend - see below |
|
1 Green Onion (sliced for garnish) |

Squeeze of Lemon Juice |
NOTES
This dish can be made with shrimp, chicken, tofu or anything you have on hand. Take stock of what you have available and make it your own.
