SeeFood Paella

This tasty "SeeFood" Paella was born out of necessity. After a long day of travel we were both tired and hungry and in need of a warm, comforting meal that could be whipped up in under an hour. We had a mishmash of leftover ingredients from previous meals during the week; artichoke hearts from a pizza, some remaining peas in the freezer - you name it, it went in! From pantry remnants rose this delicious dish, that was both simple to toss together and a great way to avoid food waste. Every meal I create follows this approach. Packing for an extended road-trip is always a gamble, leading to an overpacked kitchen on wheels. The challenge? Embrace the chaos, get inventive, and craft your own flavorful masterpiece. Trust me, it will be a campfire legend, a memory etched in the family cookbook for miles to come!




INGREDIENTS

METHOD

1 C. Arborio Rice (205 g.)

  • Bring 3 cups of water/stock to a slow simmer on the stove

3 ½ C. Stock (750 ml.)

  • Slice/dice veggies to your liking using the photos as your guide

½ C. Mushrooms -your choice (222 g.)

  • Using a well oiled skillet or Skottle, sautè your mirepiox (carrots, onion & celery) on medium high heat (2 mins.)

¼ C. Chorizo Sausage (60g.)

  • Add your mushrooms / chicken/ shrimp/ chorizo and sauté (brown lightly careful not to overcook / 5 -10 mins. approx.)

1 Medium Zucchini (160 g.)

  • Add (your choice of veggies) zucchini and bell peppers sauté (2-5 mins.)

½ C. Frozen Sweet Peas (60 g.)

  • Add rice to your skillet and stir continuously to lightly toast (2-5 mins.)

½ C. Artichoke Hearts (80 g. quartered)

  • Add Paella seasoning blend (recipe below) and stir to combine and coat your rice

1 Medium Bell Pepper (95 g.)

  • Add stock and stir thoroughly. Once rice comes to a simmer, you may arrange veggies at this time (5-7 mins.)

¼ C. Mirepoix (40 g. ) (equal parts celery carrots, onions; finely diced)

  • Finally, add your peas to garnish and allow paella to continue to simmer on medium low without stirring until all liquid is absorbed (20-25 mins.)

2 Tbs. Paella seasoning blend - see below

  • Finish with a squeeze of lime juice and garnish with cilantro and green onion.

1 Green Onion (sliced for garnish)

  • Enjoy!

NOTES

This dish can be made with shrimp, chicken, tofu or anything you have on hand. Take stock of what you have available and make it your own.

1 Tbs. Saffron

1 Tbs. Paprika

1 Tbs. Road Dust / all-purpose seasoning

1 Tsp. Tumeric Powder

1/4 Tsp. Achiote Powder (optional)

BLEND and keep in airtight ball jar
